Meal Prep Monday

I feel like I have 75 extra things on my calendar this week, so it's a lot of easy and quick dinners.


Monday- Pizza and Salad

If you haven't tried Aldi's refrigerated thin crust pizzas you are seriously missing out. This week they're on sale for like $6. How can you go wrong?


Tuesday- Swedish Meatballs with squash and potatoes

Can we just say YAY for squash season? I love fall and all of the harvest veggies that I can start cooking with again


Wednesday- Stuffed Peppers

One of the Mr's favorites. Here's the recipe again if you missed it.

1 can of rotel (half drained)

1 brick of cream cheese

1 lb of bulk sausage browned and drained


Cook the sausage, add the rotel, and cream cheese. Put in halved green peppers and top with shredded cheese. Bake at 425 for 25-30 minutes until cheese is melted and peppers are al dente.


Thursday- Country Sausage with Au Gratin Potatoes and corn


Friday- Stuffed chicken with rice blend and broccoli
