Meal Prep Monday

It officially feels like winter here in MN. The jackets have been pulled out of retirement and we are in solid comfort food mode.


Here's what we are eating this week-


Monday- Homemade Lasagna, garlic toast, and salad


Tuesday- Grilled Cheese and Tomato Soup

A super easy dinner, but we are doing adult grilled cheese on sourdough with a fun variety of cheeses.


Wednesday- Cheesy chicken and broccoli potatoes

Sounds weird. I know, but don't knock it until you try it!

I throw whole baked potatoes in the crock pot wrapped in foil before I leave for work.

Then in an 8x8 pan I throw frozen shredded chicken breast, top with a stick of cream cheese, 1 head of fresh broccoli diced, some red pepper flakes, and top with shredded cheddar. Bake at 425 for 10-15 just until the cheese is melted and throw it on your potato with some sour cream. Seriously, one of the easiest meal ever and leftovers are awesome.

Thursday- Maple Glazed Salmon with green beans and wild rice


Friday- Leftovers!
